Settlers
learned
how to
prepare
swamp
cabbage
from the
Seminoles.
The
sabal
palm
tree
was
cut
down
and
only
the
heart
was
used.
The
hard
tough
fronds
were
cut
off
to
reach
the
white
heart.
The
tender
heart
was
cut
into
½
inch
cubes
and
cooked
slowly
in a
pot
of
water
for
20-30
minutes.
Sugar
and
salt
were
added
for
taste.
The
mixture
was
simmered
until
tender.
Swamp
cabbage
appears
on
grocery
shelves
as
Hearts
of
Palm.
